I love getting up early and using this time first thing in the morning to think. Sometimes thinking consists of staring off into space enjoying the quiet, looking over the calendar for the week, wondering what has been used up in the fridge that I don’t know about, or sometimes the elusive thought about what’s for dinner?
My mind immediately goes to, “What’s in the house, so I don’t have to make yet another trip to the grocery store?” Today for me that means left over lasagna, and what can I get ready for tomorrow. One of my go to meals for a quick weeknight dinner is rice, with a protein, and a vegetable. I often like to mix all those ingredients together (like a one pot meal) that most often last more than a day.
